On the go energy bars
Don’t let the gooey sweetness of these delicious snacks fool you in to thinking they’re naughty – they’re full of natural sugar, fibre and protein so they’ll keep you going for hours.
They’re much cheaper than store-bought versions and easy to make too – you don’t even need to bake them!
What’s not to love?
- 9 medjool dates
- 1 cup of your choice of nuts, seeds and mixed fruit (go 50/50 with the nuts and fruit)
- 1 tbsp of something naturally sweet and sticky: Honey, agave syrup, maple syrup
- Throw in some other extras for flavour: Cinnamon, nutmeg, mixed spice, vanilla, orange zest, espresso powder, cocoa powder, chocolate chips. You could even add some nut butter for extra creaminess.
Chuck all the ingredients in to a blender and blitz until the mixture sticks together, then shape in to balls or bars. You can store them for up to a week in an airtight container, and wrap them in greaseproof paper for transportation. If you eat according to your goals, you’ll reach them.
